Just another student recipe: Cheesy Tomato and Zucchini Pasta


I usually do my grocery shopping on a Sunday. You know, just to get ready for the week. I need to go grocery shopping, but I couldn’t bring myself to go today. The cold-ish weather, no money and just…the desire to relax today. Haha! So today I decided to whip up something…it’s quick, easy and a little cheesy!

Over the past few days  I’ve been staring at the zucchini and tomatoes in the fridge. I was not inspired to make anything. Until today. I can tell you now, it was probably the most ‘studenty’ meal I have ever made!

Want to know the best part? It was all cooked in the one pot! Convinced yet? Here we go!


  • 1 Zucchini
  • 4 Tomatoes
  • Butter
  • Pepper
  • Cheese (Today I used 4 individually wrapped sliced pieces of cheese: Woolworth’s smokey cheese slices to be exact) Yesterday, I wasn’t convinced that this cheese would taste very nice with the zucchini but I was wrong, it was amazing!
  • and…half a mug of pasta! I like to use the small shell pasta.

Very simple instructions:

Step 1: Grab a medium-sized pot and cook the pasta for 15 minutes. While the pasta is cooking, dice the zucchini and tomatoes (this doesn’t need to be perfect!).

Step 2: Drain the pasta.

Step 3: Now add a chunk of butter to the empty pot. Use a medium-low heat for gas.

Step 4: . Put the diced zucchini and tomatoes into the pot.

Step 5: Stir the pot continuously to make sure nothing sticks to the bottom. Add the pepper. The zucchini and tomatoes will start to soften.

Step 6: Starting unwrapping the cheese slices and drop one in every few seconds while using a spoon to mash it up. Keep mixing. It will start to melt. Once you’ve added all the cheese mix it all around for about 2-3 minutes. Now put the pasta back into the pot and mix for another minute. Keep the heat on low.


Step 7: Put some in a bowl and try it! 😀
