So today was the first day of T3 and I spent most of my day in the library reading and taking notes. When I walked out, the sun was shining and it felt like summer had come early with the warm breeze. I knew I had to cook something summery today for dinner. So I decided to pan fry some fish fillets and combine Greek yoghurt with a few extra things. I can honestly tell you it tasted incredible and made in 25 minutes! I’ve decided to share this one just in case there are any uni students out there who would like to spice up their frozen five dollar fish fillets within just a few minutes.
Yum! What an amazingly quick and tasty dinner. It’s so simple and the easy sauce just adds that extra flavour, with hardly any effort required.
So, you’ve just cooked the fish fillets.
Step 1: Grab a large mug or small mixing bowl and add 6 heaped tablespoons of Greek style yogurt (depending on how far you want it to go, add more or less).
Step 2: Chop up 5 garlic gloves and add to the yogurt.
Step 3: Add a tiny bit of lemon juice.
Step 4: Add a small amount of pepper and a pinch of salt.
Step 5: Mix all the ingredients together and it’s ready to go over the fish.
Step 6: If you’d like to add tomatoes, I’d suggest lightly cooking a few cherry tomatoes in the fry pan. The cherry tomatoes add a touch of juicy sweetness and only need to be in the pan for 5 minutes on a low temperature.
